Watermelon Salad

Ingredients:

-1 small watermelon, peeled and cut into bite size cubes

-16 oz crumbled feta

-1 large bunch of fresh mint, torn

-⅓ cup olive oil

-Salt and pepper to taste


Directions:

1. Arrange cut watermelon on a flat serving platter with a lip

2. Put feta and mint on top of watermelon and drizzle olive oil on top

3. Add salt and pepper to taste


Notes:

I buy a personal size watermelon for this recipe.

I find that a watermelon with a flat side seems to be sweeter and riper.

Feel free to pour a balsamic glaze on top as well for a more tart flavor.
