California Salad

Ingredients:

-2-3 heads romaine lettuce, washed and quartered

-1 large can chickpeas (I use Goya)

-3 granny smith apples, diced

-3 avocados, sliced

-1 ½ cup pomegranate seeds

-3 cups blanched green beans (salted)

-5 grilled chicken breasts, sliced

-16 oz crumbled feta cheese (you can also use goat)


Directions:

1. Grill chicken (see my notes for a great way to make it more flavorful!)

2. On a large platter, put romaine on bottom

3. Arrange ingredients (except cheese)  on top of romaine in rows

4. Add feta crumbles to top


Notes:

For additional flavor, you can marinate your chicken breast. For this recipe, I prefer using this marinade (https://www.epicuriousmom.com/post/all-purpose-marinade).


Dressing suggestions:
